Needing a staple Winter soup? Try our classic pumpkin soup for those cold Winter nights. This family favorite enhances the taste of natural sweetness and it’s complementary simmering ground spices. This recipe is low maintenance with minimal meal prepation time and is sure to give you a cozy hug by filling your stomach this Winter.
Ingredients:
1kg butternut pumkin
1 leek
1 white onion
2 potatoes
2 garlic cloves
1/2 tsp grated nutmeg
2 tbsp olive oil
1L vegetable liquid stock
1/2 cup of lite cream
50g softened butter
1 tsp ground coriander
1 tsp crushed black pepper
2 tsp salt
2 tsp ground cumin
Steps
- On low heat place oil in a large cooking pot and add chopped leek, garlic cloves and onion. Add cumin, ground coriander, nutmeg and pepper then simmer until softened but not coloured.
- Dice pumkin and potatoes then add into pot to simmer further for 1 minute.
- Set pot aside for 30 seconds and allow pot to cool.
- Slowly stir, adding vegetable liquid stock into the pot and continue stirring for 30 seconds.
- Return pot to low heat and continue to stir whlist adding salt and if desired additional nutmeg.
- Turn temperature to medium heat and allow broth to boil until the pumkin and potatoes have softened.
- Once softened, remove pot from heat and place aside to cool for 10 minutes.
- Place hand held blender into pot and blend until smooth.
- Add butter and slowly stir soup completely.
